Menu Monday - Burritos!


This weeks recipe is Burritos! My family loves this dish, it is an easy item to fix and feed a hungry bunch of guys.

Adjust according to your family size. I make about 10 for my family of 4 and have a couple of leftovers for late night snack. You know how boys are :)

You will need-

1 - 1 1/2 lbs of ground beef or turkey if you like
1 package of taco seasoning - choose your taste - mild, hot, etc
1 can refried beans - again choose your taste
1 small can (4.5 oz) of chopped green chiles
1 16 oz. package of shredded cheese - your taste, cheddar, Mexican style, etc.
10 large size tortillas
Salsa and sour cream

Brown the beef or turkey until cooked through. Add the taco seasoning according to the package instructions. Mix in the beans and green chiles.

Once the beef or turkey mixture is done you will need to preheat your oven to 350 degrees. Next you will assemble the burritos. On each tortilla shell you will layer the meat mixture and top with cheese. Roll the shell and place seam down on a cookie sheet. Repeat for each burrito. I top the center of the burritos with the rest of the cheese. Bake for about 30 minutes, until the edges begin to brown.

Serve with salsa and sour cream. Enjoy!!
